CAULIFLOWER PIZZA CRUST!

Just found this great recipe for a pizza crust that doesn't make pizza seem so bad! Enjoy!

Cauliflower Crust Pizza

 

 

Ingredients:

 

1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)

pizza sauce, shredded cheese and your choice of toppings*

 

Directions:

 

To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.

One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

To Make the Pizza Crust:

Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.

In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.

Bake at 450 degrees for 15 minutes.

Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Enjoy!

*Note that toppings need to be precooked since you are only broiling for a few minutes.

Note for those that don’ t have a microwave:

You can steam the florets on the stove before ricing them. The texture/consistency won’t be the same (It will be more like a puree) but it still works fine once you mix all the ingredients together! I know because I’ve tried it that way too!

you're only a day away!!!

I can't believe i'm sitting here less than 15 hours away from surgery! I have been getting increasingly anxious but am also so excited for the journey ahead. The hospital just called and said I need to be at the hospital by 730 am. The butterflies in my belly are going crazy! This time tomorrow I'll be resting in my hospital room! amazing how time flies! It's just becoming so real that my life is really changing forever. No going back, i think that's the scarey part. and the road ahead experiencing everything thinner, and without worrying about what my next meal will be. Crazy! Here's praying for a speedy recovery, not just for me, but for all the OH people going in tomorrow! Pray for us all!!

getting close!!!

My surgery is schedule for 9/25!!! I'm so excited, and nervous, and a bunch of other emotions! I'm trying to be patient waiting for the final approval from MVP and now i found out I can check the status online so every 5 minutes I'm checking- it's getting a little obsessive lol.
I started going to the gym but have slacked off a little already, I have to get back in there! I felt so much better!
I am also having a lot of food funerals, eating everything junk food related that i can get in my mouth! But as asoon as I get the final ok! I'll get back down to business. I'm just having a little farewell party
I'm down 20lbs since starting the pre op procedure so I'm very excited for that, and people at work have noticed as well. (and my hubby!) Everythings gone pretty well, had my little hump to get over with cardiac clearance. But the endoscopy was a breeze and every other appt has been great. The staff at my dr's is great too!
Now I'm just waiting for this approval from insurance which has me so nervous because according to the dr's office my insurance has yet to offically approve VSG for anyone. My only saving grace is I don't naturally absorb b12 so the bypass wouldn't be a good choice for me. So my fingers, toes, legs and eyes are crossed that I get that approval! Prayers please!!!???

Finally overcoming GYM fear!!!

For as long as I can remember now, I've had this overwelming anxiety about the gym. Everytime I've tried to go I'll pull it, palms sweating, heart racing, shortness of breath, and total fear runs through me. It gets so intense that I just turn around and  go home. Now that I've decided to prepare for VSG I know I need to get in there, start working out, and get into a healthy routine, be one step ahead of my skin (hopefully!). What worse about this ridiculous fear of the gym is that husband has been more than willing to go with me. Stay with me until I'm comfortable on the machines. I know my anxiety is totally ridiculous. I don't even know anyone where I live so what am I afraid of!? Thanks to the wonderful replies that I got on a post last week on here regarding this situation, especially the one that stated :"it might be destressing, but it's not life threatening". That was EXACTLY what I needed! Tues night, i sucked it up and walked through the doors with my hubby. I went at 730pm so it would be after the "after work rush". You know what? I didn't pass out, the workers were really nice! There were meatheads there but they paid me NO mind at all! Mu husband and I took turns on the machines and then did 10min on the eliptical (which I NEVER thought i would finish but I did!!!) I felt like I was on a high when I left, my body was screaming, but it was alive! I couldn't wait to go back last night! And I did. I'm not totally comfortable yet, but I conquered my fear! I don't exactly like being the "fat sweaty mess" but if I don't start somewhere I'll ever get to the other side! Just wanted to share and hopefully inspire someone else to take that first step into the door! not so bad on the other side!!! I'm going to post on the forum to share my experience as well!!

cardiac clearance!!!

It's been such a struggle with my blood pressure getting cardiac clearance for the surgery! Everything else seemed to be falling into place except that! From the sleeve finally being approved by insurance, to my vit.B dif, actually working in my favor because that makes me NOT a canidate for bypass, which more so makes the sleeve coverable, to my hubby being on board with me when originally he was a sceptic. Then my stupid blood pressure was way too high for me to even do a stress test.. a month of fighting my way through and I FINALLY got the letter of approval of the Dr.!!!! This is such an exciting day!!
