adventures in yogurt making

For Christmas my BIL got me a Danni yogurt maker from Target.
The basic recipe was easy.
Boil 1 qt of milk (skim, 1%, 2% or whole)
Let cool to room temp
Add 1/2 C of organic live culture yogurt
mix well
pour into provided jars
place in yogurt maker
set the timer for 10 hrs
refrigerate for 3-4 hrs.
So the first time, I made it with peach puree (light syrup peaches) and a packet of Splenda on the bottom and poured the cooled yogurt/milk over the top for half the jars.
The other 3 I just filled with the yogurt/milk
10 hrs later, I had some delicious yogurt----but very, very soft. Almost a whipped cream, lightly yogurt tangy. The DH pronounced the peach yummy---and with SF Raspberry syrup the plain was ambrosia.
But I had to try to improve
Second batch, I made the peach for the DH the same way. Then I stirred two scoops of Strawberry Protein powder in to the yogurt/milk. (I really had to stir it up to be sure it was all mixed.)
I set this batch up for 12 hours, hoping to get a firmer yogurt.
Well, the protein added yogurt was very firm. The peach was still a very soft cream consistancy.
So I decided to drain the peach yogurt---to get a firmer, greek yogurt texture.
I lined a colander with lightweight muslin (you can use any clean handkerchief weight material)
Poured the peach yogurt into the colander.
Tied it up like a hobo bag an suspended the bag off of a wooden spoon over a deep bowl.
Let it drip for a couple of hours.
Voila'! Peach Greek yogurt!

1 Week Out

January 6th, 2009 I had a lap RNY
It's one week later. I'm home. No complications. It's been a fairly easy recovery.
I'm still sore, but nothing a couple of crushed tylenol can't handle.
My Dr's regimin requires 2 week full liquids before progressing to puree's
Interestingly, my food obsession is still showing. I'm gravitating to recipe sites,
cook books and cooking shows.
I've been cooking up a storm, letting the DH try all the recipes and pureeing and
freezing my portion.
Oddly enough, that takes care of the head hungry.
